According to legend, an Ethiopian goat farmer once observed that his animals would become energized after eating the berries of a certain type of shrub. Eating some of these berries himself, the farmer discovered they made him wakeful and alert. Thousands of years later, these same shrubs are grown worldwide to make beans for the aromatic beverage developed from these berries: coffee.

From Mexico to Colombia, Ethiopia to Kenya, and New Guinea to Sumatra, coffee farms are a major part of the world's economy. Thanks to generations of monks and merchants who refined the practice of making coffee from these berries, people around the world enjoy their morning coffee every day.

Once berries are harvested from the coffee plant, they have a ways to go before they make it into your cup. The beans are first dried into the familiar coffee bean, and then shipped to a roaster. While dried coffee beans have a lengthy shelf-life, coffee reaches its premium flavor shortly after roasting, so it's important that a good cup of coffee be freshly roasted.
